Away with this Barbecue Chicken Quesadilla recipe.
I made this one time for him and he absolutely loved it. He's the steak and potatoes kind-of-guy, the type of guy that shovels his food down his throat without the need to breathe and always finishes what I can't. Trust me, he will love it and ask for 2nd's and 3rds. It's super EZ to make, trust me, I like to take the shortest route too.
Ingredients:
1 red onion, sliced thin
1 bell pepper, red or green, sliced thin
2 tablespoons butter
1 cup cooked chicken, shredded (use that ready rotissierie chicken at the market)
1/2-1 cup barbecue sauce
1-2 cup monterey jack cheese, shredded
cilantro, chopped (optional)
4 large flour tortillas
additional barbecue sauce
Directions:
1) Saute onions and bell peppers in pan with butter. Remove from pan and set aside.
2) In another pan heat through shredded chicken with bbq sauce.
3) Lightly butter one side of a tortilla.
4) Place butter side down in saute pan.
5) Quickly add some of the cheese, chicken and onions, peppers and cilantro to one half of tortilla. Then quickly fold in half forming a semi-circle.
6) Continue to cook until bottom side is golden brown, then carefully flip quesadilla over.
7) Brown other side and remove from pan.
8) Repeat with remaining ingredients.
9) Cut quesadilla into wedges and serve with additional barbecue sauce.
